Our olives are picked and pressed at precisely the right moment each season — and that timing is everything. A December harvest, when the olives are at their natural peak, yields significantly higher concentrations of polyphenols, the powerful antioxidants that make extra virgin olive oil so celebrated for its health benefits. It's also what gives our oil its signature bold, robust flavor and pleasantly peppery finish that lingers on the palate.
